Masala Dosa

- Rooted in South India, dosa itself dates back over 1,500 years, with early mentions in Tamil literature like Silappatikaram and Sangam poetry

- The masala dosa, with its spiced potato filling, is believed to have originated in the Udupi region of Karnataka in the 1930s

Ingredients:

Cooking Steps:

  1. Heat Tawa
  2. Spread Batter
  3. Drizzle Oil or Ghee
  4. Cook Until Crisp
  5. Add Masala & Fold
Sauté
Cook quickly in a small amount of oil over high heat
Blanch
Boil briefly, then cool in ice water to stop cooking
Simmer
CCook gently just below boiling point
Braise
Cook slowly in a small amount of liquid

Paneer Butter Masala

Paneer Butter Masala

Paneer Butter Masala is a creamy curry made with paneer, butter, and tomato gravy.
